I’ve made granola many times. Once in a while it seems I’ve gotten pretty close to a decent recipe. I was watching Bondi Harvest on Youtube when I noticed that the way they made their granola was much easier and it looks so much better than mine! So, I decided to take some of their ideas and integrate them with my favorite ingredients to make a new granola recipe.
And it is fantastic!
This is hardy granola. It sticks together like a granola bar so you can take it with you on your adventures. It can also be crushed over yogurt or with some milk. Give it a go!
The measurements can be adjusted to your liking. This is just what I threw together and it worked.
Cookie sheet lined with parchment paper (or foil).
In a small pot over low heat liquify the honey. Once honey has started to bubble a little add the maple syrup. Allow this to cook about 5 minutes. There should be big bubbles across the top for the duration of the cook time. Swirl the pot once in awhile to keep the honey from burning on the sides.
After 5 minutes turn off the heat, stir in the coconut oil, and then add all the dry ingredients to the pot (if big enough) and mix quickly.
Spread mixture onto cookie sheet. Place in oven. Check after 5 minutes but you may need more time. The goal is lightly browned granola. It browns quickly so keep a close eye on it.
Once done remove from oven and let cool.
Keep granola in an airtight container and enjoy wherever and however you like!
